Freezer Bag Dinners

Ten freezer bag dinners for seniors, filled on a good day and frozen flat for the cold evenings when going out is the last thing you want. Not one thing to chop: everything comes from a can, a jar or a bag already cut. Stay for number ten, a pork ragu that makes its own sauce.

Good to know: Each bag feeds two.

The 10 recipes, in the order Ruth makes them

Number 1 Minestrone Bag: 1 can diced tomatoes + 1 can white beans, drained + 2 cups frozen mixed vegetables + ½ cup frozen onion + 1 tsp each jarred garlic and Italian seasoning
Number 2 Shrimp Fried Rice Bag: 2 cups frozen cooked rice + 1 cup frozen peas and carrots + ½ cup frozen onion + ½ lb small raw shrimp, peeled
Number 3 Chickpea and Spinach Curry Bag: 1 can chickpeas, drained + 1 can diced tomatoes + 1 cup frozen spinach + ½ cup frozen onion + 2 tsp curry powder + 1 tsp each jarred garlic and ginger
Number 4 Turkey Tacos Bag: 1 lb ground turkey + 1 packet taco seasoning + 1 can tomatoes with green chiles + ½ cup frozen corn
Number 5 Beef and Broccoli Bag: 1 lb stir-fry beef strips + ⅓ cup soy sauce + 2 tbsp brown sugar + 1 tbsp cornstarch + 1 tsp jarred garlic + ½ tsp ground ginger
Number 6 Sausage and Peppers Bag: 4 raw Italian sausages + 3 cups frozen pepper and onion strips + 1 tbsp oil + 1 tsp Italian seasoning
Number 7 Ranch Drumsticks and Potatoes Bag: 4 chicken drumsticks + 2 tbsp oil + 1 packet dry ranch mix
Number 8 White Chicken Chili Bag: 1 lb boneless chicken thighs, whole + 1 can white beans, drained + 1 small can green chiles + 1 cup frozen corn + ½ cup frozen onion + 1 tsp cumin
Number 9 Beef Stroganoff Bag: 1 lb stew beef shaken with 2 tbsp flour + 1 box sliced mushrooms + ½ cup frozen onion + 1 tbsp Worcestershire
Number 10 Pork Ragu Bag: 1 boneless pork shoulder, about 2 lb, whole + 1 large can crushed tomatoes + ½ cup frozen onion + 2 tsp jarred garlic + 2 tsp Italian seasoning
